Dry Ingredients

½ cup all-purpose flour

¼ teaspoon baking soda

Wet Ingredients

1 tablespoon peanut butter (unsweetened, xylitol-free)

1 tablespoon vegetable oil

¼ cup unsweetened applesauce

¼ cup pumpkin purée

 1 egg

For the Icing

½ cup plain Greek yogurt

¼ cup peanut butter (unsweetened, xylitol-free)

 

Instructions

1.      Preheat the oven: Set to 350°F.

2.      Mix the dry ingredients: In a small bowl, combine the flour and baking soda.

3.      Blend the wet ingredients: In a separate bowl, whisk together the peanut butter, vegetable oil, applesauce, pumpkin purée, and egg until smooth.

4.      Combine: Stir the dry mixture into the wet until fully incorporated with no lumps.

5.      Bake: Grease two small ceramic bowls (or ramekins), divide batter evenly, and bake for about 20 minutes, or until a toothpick comes out clean.

6.      Prepare the icing: While cakes bake, stir together Greek yogurt and peanut butter until smooth. Refrigerate until ready to use.

7.      Assemble: Let cakes cool completely. Trim tops flat, spread icing between layers, stack, and frost as desired.
